King Salmon with Adrain from Mount Cook

Deep in the Southern Alps of New Zealand lies Aoraki/Mount Cook National Park. From its craggy alpine ridges flows the purest fresh water on the planet. Ice cold. Constantly flowing. Perfectly chilled for a much prized southern delicacy. Freshwater King Salmon King salmon (Chinook) were introduced into local rivers from the Sacramento River 100 Years ago. The fish we farm today are direct descendants of this original North American stock. Our salmon are raised in the swift, cold currents of New Zealand’s Southern Alps.

The water is fresh and flows constantly. In this pure environment, there’s no need to use vaccines, pesticides or antibiotics. Just skilled staff and good farming practices to perfect the conditions for growing naturally healthy fish. The Glistening Landscape
Our Location Our farms are located within a network of continuously flowing waterways, which connect three alpine lakes. These lakes support New Zealand’s largest renewable hydro scheme. Above us, Aoraki/ Mt Cook is the highest peak in New Zealand with an elevation of 12,218 feet (3,724m).
Freshwater King Salmon thrive in the pure, cold, glacial water that flows from these mountains directly through our farms. Water At Mt Cook Alpine Salmon, we know water is a key ingredient in creating great tasting salmon. Our water flows straight from the glaciers of Mt Cook National Park. It’s so pure you can drink it, above and below the farm. Roughly 2 million gallons of this pure glacier fed water passes through our farms every minute, creating an ever-changing, refreshed environment for our Freshwater King Salmon.
In our remote environment, we let Nature take the lead. This means minimal human intervention and low stocking densities – giving our salmon space to grow and thrive. What Sets Us Apart Our fish are raised under environmentally sustainable farming practices across four farms. Highly skilled staff and good farming practices ensure our salmon are well looked after, and never stressed. The glacial water that flows though our farms, creates a constantly refreshed environment and helps our fish stay healthy, naturally.
There’s no need to use growth hormones, vaccines, pesticides or antibiotics. Not only do we care for our salmon 24/7 at our farms, we also own our own hatcheries and processing plant. This vertically integrated business model, means we actively manage each step ensuring the final product is the finest tasting salmon in the world. Our documentation provides full traceability of each fish from customer back to its batch of hatchery eggs and parentage.
Feeding Our Fish
We only use premium feed from a trusted international supplier; all feed is sustainable and certified GM free. This proprietary feed is formulated to minimise the depletion of feeder fish in the ocean. How we feed our salmon is also important; we prefer to feed our fish by hand. It’s our chance to observe and respond to their needs and helps ensure they are fed to correct nutritional levels. Climatic conditions, water temperatures, barometric pressure and even wind velocity can affect the appetite of our salmon. Our farm staff adapt the feeding regime to the conditions. All this extra attention does take a little longer, but we think it’s time well spent.
Whole fish from Mt Cook Alpine Salmon now arrive gill-tagged like this. These tags don’t just look flash - each one has unique code, which we can use to trace each individual fish.

Certifications – Top Ratings for Responsible Practices We welcome the scrutiny of others to review what we do, audit our processes and comment on our management practices. It’s part of being responsible, and it’s nice when others agree: We are audited and approved by Global Food Safety Initiative – Recognised Certification Programme. We were the first salmon farm in Australasia to receive Best Aquaculture Practice Certification. Monterey Bay Aquarium has recently awarded Mt Cook Alpine Salmon with a ‘best choice’ green rating – acknowledgement of our environmentally responsible practices. Our modern processing plant is regularly audited by the New Zealand Governments exporting agency and retains the highest ranking accreditation. Our best in class practices and duty of care to the environment, ensure our fish, wherever it is delivered in the world will always meet the claim of being Nature’s finest tasting salmon.
Adrian from Mount Cook Alpine Salmon was at the event to introduce us to nature’s finest salmon by breaking down a whole salmon and explaining the attributes.

I'm in heaven, the texture is so GOOD, best I have ever tasted and I'm so not kidding you! The meat is so FINE! It is so good even without any wasabi/soy sauce!
King salmon belly, so smooth and fine so heavenly~Thanks to Albert for the fine slicing too! Its a piece of fine art! 
Next, Albert prepared Poke for us! A lightly seasoned raw salmon, that adds a sweetness and freshness that can only be done with such fresh king salmon.
Fresh salmon skin and bones! Super crispy and nothing from a salmon is gone to waste! Ever part of it is delicacy~ With the right chef of cos ;)

The Providore

Situated at Mandarin Gallery level 2, The Providore, is a Italian mix western cuisine, quite popular for their breakfast and brunch. It consist of a cafe, deli, grocery and bakery as well. It is also a very nice place to chill for dinner, do check our their new menu~
CAFE
At our cafés you’ll find great coffee and gorgeous food inspired by our own product range, together with the freshest seasonal ingredients. Our light and contemporary spaces offer all day dining as well as selection of wines, craft beers and cocktails. They are the perfect place to relax with friends and family.
DELI
Our delis carry a large range of artisanal cheese, charcuterie, olives and antipasti sourced from some of the world’s best producers and are available as dine-in platters or to take home. With knowledgeable staff on hand to guide you through the range – as well as help to freshly slice, cut or package your choices – we can cover all your deli needs.


BAKERY
Our bakers and pastry chefs use only the best ingredients and traditional techniques to produce a range of european style breads, cakes and pastries. Baked fresh daily, they are served in our outlets on our café menu and for takeaway.
GROCERY
In our spacious and industrial settings, you’ll find a full range of gourmet ingredients, pantry staples, organic products and an extensive collection of homeware, boutique wines, craft beers, artisanal spirits, cook books and gifts. We host regular product tastings and demonstrations in-store to bring our products to life and showcase some of our great producers.

It is a generous amount, pretty filling. The tomatoes are so sweet and fresh!

The pork belly is LOVE! I enjoyed the dips as well~

The rosti is really crispy~ Really nice dressing over the salad!
